Sous Chef - Bakery & Pastry
Job Summary:
The Sous Chef - Bakery & Pastry plays a vital role in the operational
management of the Bakery & Pastry Department at Hunger Inc. Central Kitchen.
Collaborating closely with the Executive Pastry Chef, this position ensures
efficient production, exceptional quality, and strong team leadership within a
dynamic and high-volume environment.
Key Responsibilities:

Support the Head of Bakery & Pastry in the day-to-day management of Bakery &
Pastry operations within the Central Kitchen.

Lead daily production, ensuring products are prepared according to
production schedules and outlet requirements.

Monitor inventory levels, assist with ordering, stock counts and ingredient
utilisation while minimising waste and supporting food cost objectives.

Maintain proper storage, stock rotation (FIFO) and handling of all raw
materials and finished products.

Train, mentor and develop junior chefs and bakers while fostering a culture
of accountability, teamwork and continuous learning.

Monitor bakery equipment performance, cleanliness and preventive maintenance
requirements, escalating repairs where necessary.

Support product trials, recipe refinement and seasonal menu development as
directed by the Head of Bakery & Pastry.
Requirements:
-
At least 5 years as Chef de Partie (CDP) OR 2 years as Junior Sous Chef OR 3
years as Sous Chef.

Formal qualification in Culinary Arts, Baking or Pastry from a recognised
institution preferred.

Strong understanding of artisan bread production, viennoiserie, pastry,
desserts and large-scale bakery production.

Experience working in a Central Production Kitchen or commissary environment
is highly desirable.

Strong knowledge of food safety, HACCP, inventory management, production
planning and food costing.
- Excellent organisational, communication and coaching skills.

Strong attention to detail with a commitment to product consistency and
quality.

Ability to work effectively in a fast-paced, high-volume production
environment.
Preferred Qualifications:

Experience in developing and implementing seasonal menu items and innovative
pastry concepts.

Proficiency in modern baking techniques and trends, with a creative approach
to product presentation.

Strong leadership skills with a proven track record of managing and
motivating culinary teams.

Familiarity with sustainability practices in the kitchen and knowledge of
sourcing local ingredients.
